Complex fruit characters being cassis, plum with integrated smokey oak.

Food and Wine Match:

A great match for roasted or barbecued red meats or tomato-based pasta dishes

Whilst drinking very well now, this wine will reward short-term cellaring for up to three years from the vintage year.

Harvest Notes:

Grapes were sourced from Gisborne and Hawkes bay . A combination of soils being clay loam over shingle, gravels, free draining fertile to semi fertile dense soils results in soft fleshy fruit driven wines with dark berry, plummy fruit and great structure. The combination of soils and climates produces this approachable, fruit driven yet nicely concentrated Merlot.

Fermentation Notes:

Machine harvested and destemmed (without crushing) into rotary fermenters. Short fermentations of 6 -10 days, peaking ay 26C, were used to produce soft fruity wines with vibrant colour and soft tannin structures.

Maturation Notes:

The wine was matured in stainless tanks in the presence of French oak, using micro-oxygenation to stabilise colour and integrate the oak and fruit tannins. Malolactic fermentation occurred in tank when micro-oxygenation was complete. After blending the wine was fined and then filtered before bottling.
